Omelette on the braai
- 2 sweet peppers of your choice
- 1 packet (about 500g) good quality boerewors
- 1 red onion, chopped roughly
- Cup spinach (optional)
- 2 medium sized potatoes, precooked to soft and firm
- olive oil
- butter
- 4 – 6 eggs
- salt and pepper
- 1 cup cheddar cheese, grated (Feta – optional)
- Paprika (optional)
Method
- Place the red pepper directly into the flames and coals in to char the skin.
- Once the outside is black, place the peppers into a glass bowl and cover with plastic wrap so that the peppers sweat. Remove the skins once cool and chop roughly.
- While the peppers are sweating, braai the boerewors until 60% done over hot coals
- Slice your onions and chop the boerewors and potato into bite size pieces
- Place the oil and butter in your fireproof pan on the braai and fry the onion, potato and wors. Season with salt and pepper.
- Whisk the eggs together and pour over the vegetables and boerewors.
- Add the cheese and if you would like some paprika
- Cover your pan with a lid and bake on the fire until done.
