Omelette on the braai

Ingredients

  • 2 sweet peppers of your choice
  • 1 packet (about 500g) good quality boerewors
  • 1 red onion, chopped roughly
  • Cup spinach (optional)
  • 2 medium sized potatoes, precooked to soft and firm
  • olive oil
  • butter
  • 4 – 6 eggs
  • salt and pepper
  • 1 cup cheddar cheese, grated (Feta – optional)
  • Paprika (optional)

Method

  • Place the red pepper directly into the flames and coals in to char the skin.
  • Once the outside is black, place the peppers into a glass bowl and cover with plastic wrap so that the peppers sweat. Remove the skins once cool and chop roughly.
  • While the peppers are sweating, braai the boerewors until 60% done over hot coals
  • Slice your onions and chop the boerewors and potato into bite size pieces
  • Place the oil and butter in your fireproof pan on the braai and fry the onion, potato and wors. Season with salt and pepper.
  • Whisk the eggs together and pour over the vegetables and boerewors.
  • Add the cheese and if you would like some paprika
  • Cover your pan with a lid and bake on the fire until done.
